Copper & Cask is an independent bottler built around a simple but focused idea: seek out exceptional barrels, bottle them at full strength, and keep every release limited.

Launched in 2021, the brand set out to build an expansive library of aged whiskey, curating barrels not just for individual selection, but for thoughtful finishing, blending, and small batch releases. Rather than anchoring itself to a core product, Copper & Cask operates without a flagship, choosing instead to pursue single barrels, micro batches, and small batch expressions that highlight variation, rarity, and character.

That vision sharpened in 2022 with the addition of Barrel Master Stephen Corrigan, whose background spans over 15 years in distillation, aging, and blending. Corrigan’s experience, from early work in agriculture and wine to launching a craft distillery in Washington, D.C., helped establish Copper & Cask’s award-winning cask finishing and blending program. His approach emphasizes precision and balance, with a focus on enhancing, rather than masking, the underlying whiskey.

Sourcing plays a central role in the brand’s identity. While much of the whiskey originates from Indiana, Copper & Cask leans heavily into geographic aging variation, maturing barrels across climates like Kentucky, Texas, and Florida to influence flavor development. Additional stocks from Kentucky, Canada, and beyond further expand the blending palette, reinforcing a philosophy rooted in diversity of origin and environment.

All releases are bottled at cask strength, with an emphasis on transparency, barrel selection, and limited availability. The result is a portfolio that avoids uniformity in favor of exploration, each release offering a distinct snapshot of barrel, time, and place.

Copper & Cask operates under Latitude Beverage Company, a Boston-based wine and spirits group founded in 2007 by Kevin Mehra. Known for building high-quality brands through strategic sourcing rather than ownership of distilleries or vineyards, Latitude applies the same model here: focusing on access, value, and curation while allowing each brand, including Copper & Cask, to develop its own identity.

Within that framework, Copper & Cask stands as Latitude’s most enthusiast-driven label, centered on rarity, transparency, and the pursuit of distinctive whiskey without compromise.

Batch 016 is an 11-year, cask strength high-rye bourbon composed of 24 barrels, matured in Indiana and blended in Rhode Island. Bottled at 116.2 proof, it represents a more mature and refined expression within the lineup.

Tasting Notes

  • Nose: Deep butterscotch and frosting immediately take over. A standout note of blueberry jam-filled donut adds richness and personality. One of the more compelling noses in recent memory.
  • Palate: Full-bodied and mouthwatering with a noticeable proof-forward intensity. Brown sugar and cherry candy lead into pronounced salted caramel and buttercream. At times slightly one-dimensional, with heat pushing muddling notes.
  • Finish: A punch of hot baking spice upfront transitions into a long, evolving linger. Crème brûlée, mixed berry pie, dates, and a hint of mocha create a layered and satisfying close.

Batch 016 is defined by contrast. The nose is exceptional rich, inviting, and deeply dessert-driven — while the palate arrives with intensity, bringing both energy and heat.

For some, that proof-forward delivery will be a feature; for others, a slight distraction. But the finish brings everything back into focus, offering a long, complex unwind that rewards patience.

This is a bourbon that slows you down, not just because of the proof, but because there’s enough complexity to warrant it.

Presentation

Consistent with the lineup but more refined in execution.

The label design continues its busy yet premium aesthetic, with vintage-inspired detailing that leans toward luxury.

Batch 016 stands out further with an eye-bending back label artwork, unexplained, but intriguing enough to add character.

Distinctiveness

While still grounded in MGP’s profile, this batch pushes further into dessert-like richness than most. The nose, in particular, separates it from the pack.

It doesn’t completely escape familiar territory but it rises above it in both quality and execution.

Always Rare, Always Limited

Transparency

As with other releases, Copper & Cask provides a strong level of detail: sourcing from MGP, barrel counts, aging locations, and mashbill. The only notable omission is the exact blend percentages in earlier batches where applicable.

Still, this remains a standout example of transparency within the NDP space.

Value

Priced at $85, this remains under market for an 11-year cask strength bourbon of this quality.

Age, presentation, and standout aromatics all support the price.

This paragraph seems oddly simplistic but that’s because the value proposition is incredibly straightforward.

Author’s Note: I opened this bottle to celebrate our close friend, Emily, finding out she was cancer free. While this doesn’t affect my objective review, it felt worth noting that this bottle will always have a special place (and value) on my shelf because of that.
