Green River Launches Honey Finished Bourbon Made with Real Honey, Not Additives

A new release from Green River Distilling Co. takes aim at one of whiskey’s most crowded flavored categories by stripping the concept back to something simpler: actual bourbon and actual honey.

OWENSBORO, Ky. (May 12, 2026)Green River Distilling Co. has announced the launch of Green River Honey Finished Bourbon Whiskey, a new 92-proof expression made by finishing Kentucky Straight Bourbon with 100% real honey directly inside the barrel rather than relying on flavor additives or sweetener blends.

The release enters a category that has increasingly shifted toward lower-proof flavored whiskey products, many of which lean heavily on artificial flavoring and post-production blending. Green River’s approach is notably different in both process and positioning.

Rather than creating a whiskey liqueur, the brand starts with four-year-old Kentucky Straight Bourbon distilled and aged in Owensboro before introducing a proprietary blend of locally sourced honey directly into the barrel for secondary maturation.

The result, according to the company, is intended to preserve bourbon structure and proof while allowing the honey character to integrate naturally through barrel interaction over time.

What It Is (and Isn’t)

At its core, Green River Honey is trying to occupy a space that barely exists in the current market:

A honey whiskey that still behaves like bourbon.

The distinction matters.

Most mainstream honey whiskey products operate closer to flavored whiskey liqueurs, often sacrificing proof, texture, and traditional whiskey structure in favor of sweetness and accessibility.

Green River appears to be moving in the opposite direction.

Instead of adding flavoring after maturation, the company uses honey as part of the finishing process itself, allowing the whiskey and honey to marry inside the barrel.

It’s not a honey-flavored bourbon.
It’s not a syrup-heavy whiskey liqueur.

And importantly, it retains a proof point high enough to function like actual bourbon in cocktails.

Bottled at 92 proof (46% ABV), the whiskey is described as carrying notes of honey, caramel, orange peel, toasted oak, vanilla, and light cinnamon spice while maintaining the texture and backbone expected from Kentucky bourbon.

Dan Callaway, Master Blender for Lofted Spirits, framed the release as a response to shortcuts common within the category.

“For too long, honey whiskey has been defined by shortcuts. Natural flavors aren’t always as natural as they claim to be.”

Why This Matters

This release matters less because honey whiskey is new and more because Green River is attempting to reposition what honey whiskey can be.

That’s a notable distinction.

Over the last decade, the category has largely split into two extremes:

  • highly sweetened entry-level flavored whiskey
  • expensive specialty honey-cask finished releases

There has been surprisingly little middle ground between the two.

Green River Honey appears designed to bridge that gap:
premium enough in process to appeal to whiskey enthusiasts, but affordable and approachable enough to compete in the broader flavored whiskey space.

That positioning could matter commercially.

Honey whiskey remains one of the largest flavored whiskey segments in the U.S., but much of it has historically catered toward casual drinkers rather than traditional bourbon consumers. By keeping the proof relatively high and avoiding artificial additives, Green River is effectively testing whether the category can mature alongside the broader premium bourbon market.

There’s also a timing element worth noting.

Green River has spent the last several years building credibility through value-forward releases and recent critical success, including its Wheated Bourbon being named Best Overall Bourbon at the 2025 New York World Spirits Competition.

Releasing a flavored-adjacent product after establishing credibility matters differently than launching one to chase trends.

The risk with flavored whiskey has always been authenticity.

The honey itself is sourced through Above the Dirt Garden and Honey Shop, a Kentucky Proud™ beekeeper-owned operation working with family-owned apiaries throughout the Midwest and South.

According to Green River, the honey used is raw, pure, and unfiltered.

From a cocktail perspective, the higher proof may ultimately be one of the release’s more important features. Honey whiskey products often disappear when mixed, requiring bartenders to rebuild structure elsewhere. Green River is clearly positioning this as something that can carry cocktails on its own.

National Brand Ambassador Caryn Wells specifically pointed toward the Gold Rush as a natural fit, noting that the whiskey’s proof and built-in sweetness reduce the need for additional ingredients.

Green River Honey Finished Bourbon launches nationwide beginning May 15, 2026, with a suggested retail price of $24.99 for a 750mL bottle.

The brand is also launching a promotional “DeliverBEE” campaign allowing consumers to nominate friends, coworkers, or others to receive surprise deliveries of the whiskey.

Green River Honey isn’t trying to reinvent bourbon.

Whether that resonates will likely depend on execution more than concept.

The category already has accessibility.
What it has lacked is restraint.

By leaning into real bourbon, real honey, and a finishing process that prioritizes structure over sweetness, Green River is betting there’s room for a honey whiskey that appeals to both newer drinkers and traditional bourbon consumers without fully compromising either side.

At $24.99, it’s also priced aggressively enough that curiosity alone may carry it into a lot of glasses.
