What does it take to make great whiskey? For Whiskey Acres, it starts long before the still.

Every grain — corn, rye, wheat, barley — is grown on the same fifth-generation family farm that distills it. The water comes filtered through a natural limestone aquifer beneath those fields. And the same hands that plant and harvest carry through distillation, aging, and bottling.

Don’t just make whiskey — grow it.

This is a true estate distillery — one of the first of its kind in Illinois — operating with complete control over everything that goes into the bottle.

No sourced whiskey. Ever. Just grain, land, and patience, backed by Kentucky-influenced distilling know-how and a farming mindset that prioritizes detail over scale.

Tasting Notes

  • Nose: Yeasty with distant pear and soft baking spice. It’s muted at first, but there’s something underneath waiting.
  • Palate: A shift. Kiwi, pear, slight nuttiness, and cinnamon come through with much more energy than the nose suggests. The profile expands quickly.
  • Finish: Peppery and a bit indistinct at first, but settles into a lingering cinnamon note with a slightly funky (in a good way) malted rye character.

The most interesting of the bonded releases.

It’s not perfectly defined, but it doesn’t need to be — it’s engaging, a little different, and worth spending time with.

This is where curiosity pays off.

Distinctiveness

This is where the estate-grown approach starts to feel more dynamic.

“Seed to Spirit”

The nose undersells it, but the palate brings a mix of fruit and grain that’s less predictable.

More personality, less restraint.

Transparency

Whiskey Acres is producing estate grown and distilled whiskey with a throughline from farm to grain to glass that is clear and as transparent as it can get.


Value

Stronger than the bourbon at the same price.

More complexity, more to come back to. Still not underpriced — but easier to justify.
