What does it take to make great whiskey? For Whiskey Acres, it starts long before the still.

Every grain — corn, rye, wheat, barley — is grown on the same fifth-generation family farm that distills it. The water comes filtered through a natural limestone aquifer beneath those fields. And the same hands that plant and harvest carry through distillation, aging, and bottling.

Don’t just make whiskey — grow it.

This is a true estate distillery — one of the first of its kind in Illinois — operating with complete control over everything that goes into the bottle.

No sourced whiskey. Ever. Just grain, land, and patience, backed by Kentucky-influenced distilling know-how and a farming mindset that prioritizes detail over scale.

Tasting Notes

  • Nose: Yeasty sweet cornbread leads, with a soft, almost doughy warmth. It’s straightforward, but not dull — grain-first in a way that feels intentional.
  • Palate: That same sweet corn and yeast carry straight through with some toasted coconut. It’s cohesive, if simple, with very little deviation mid-palate.
  • Finish: Where it picks up. Peppery, slightly “proofy,” with flashes of Dr Pepper, red apple, and a lingering corn sweetness. The most interesting part of the sip.

Distinctiveness

There’s a throughline here you don’t run into often — grain character that feels owned, not assembled. The estate-grown approach shows up in moments where the profile turns distinctly fresh and recognizable.

“Seed to Spirit”

At its best, it separates itself in a way that feels genuinely different. At others, it leans younger — more corn-forward, a bit less defined. Not inconsistent, but still finding its peak.

Transparency

Whiskey Acres is producing estate grown and distilled whiskey with a throughline from farm to grain to glass that is clear and as transparent as it can get.


Value

Fair for what it is as estate grown and distilled whiskey, which certainly adds a lot of value.

But this feels more like paying for potential and process than a fully realized experience.
