Virginia 250 Pairing Dinner at Vault & Cellar
A three-course dining and cocktail pairing celebrating Virginia spirits, heritage grains, and the collaborative culture behind the Virginia 250 project.
Inside a restored bank building in Middletown, Virginia, Vault & Cellar hosted an evening that felt less like a traditional tasting event and more like a celebration of Virginia craft spirits as a whole. The dinner paired the Virginia 250 whiskey, gin, and rum releases with thoughtful seasonal dishes, original cocktails, and conversations with many of the people helping shape Virginia’s modern distilling scene.
The evening featured appearances and participation from distillers, heritage grain advocates, chefs, and industry partners from across the state — all tied together through exceptional hospitality from Kari, Dan, and the Vault & Cellar team.
Highlights included:
- A watermelon salad and gin pairing that may have been the course of the summer
- A Manhattan riff that elevated rather than masked the whiskey
- Heritage grain grits highlighting Virginia agriculture
- Conversations with distillers and makers from across the Virginia spirits community
- One of the warmest and most thoughtfully paced whiskey events I’ve attended
