A virtual barrel pick that stood out on the finish—rich, structured, and one of my top selections to date.
This barrel carries more weight than most — not just in proof, but in context. It was selected alongside my good friend Pierre during his first-ever barrel pick, and our first selection together with HK Young, a distillery whose toasted wheated profile we’ve both consistently gravitated toward.
What made this one stand out wasn’t just its richness, but its ability to hold structure under that weight. Toasted wheated bourbons can lean soft or overly confectionary. This didn’t. It pushed back.
We worked through a range of totally blind samples to get here, eventually narrowing it down to two finalists (which we later learned were both wheated barrels). This one separated itself decisively on the finish. More assertive. More complete.
After a growing list of picks over time, this lands comfortably in my top three selections to date… and that includes a 17-year “Buff Turkey” profile that set a very high bar (check out my 2025 Whiskey of the Year). This one earns its place differently, but convincingly.

“Three bourbon enthusiasts walk into a bar…” – it sounds like the start of a bad joke but instead, it’s essentially the way C.G. (Cole) Hanna, Spencer Kilijian, and Tyler Young started H.K. Young — and they are certainly a far stretch from anything remotely resembling a joke.
They exploded onto the scene in 2025 with a singular question, “What’s next?” paired with a singular purpose: to source only quality Kentucky Bourbon and finish it exclusively in secondary toasted barrels.
They aren’t the only company doing toasted barrel finishes, but they are the only ones custom-designing each toasted barrel with Independent Stave Company to match each mashbill and blend type they bottle.

The Selection Experience
This was a virtual barrel pick, which can sometimes feel like a compromise. It didn’t.
If anything, the process sharpened focus. Without the room, the noise, or the moment influencing perception, it came down purely to what was in the glass. Each sample had to stand on its own.
Pierre and I documented the process including our live reactions as we worked through the final samples.
We also leaned into it a bit and filmed a light parody after the pick. Because if you’re going to take the whiskey seriously, you don’t always have to take yourself the same way.
What mattered most: when we hit this barrel’s finish, the decision became obvious.

Tasting Notes
- Nose: Rich, layered, and immediately inviting. Cow tail caramel and cookie butter lead, followed by a soft wave of buttercream frosting and peaches & cream. There’s a subtle savory lift, something akin to orange bell pepper, that keeps the profile from settling into pure sweetness. It’s a dessert-forward nose with restraint, not excess.
- Palate: Dense and coating from the start. Maple syrup and marshmallow fluff create an almost textural richness, but it doesn’t collapse under its own weight. Mature oak tannins step in at the right moment, adding grip and structure. The proof is present, but integrated. This drinks with intention, not heat.
- Finish: This is where the barrel earns its place. A full, enveloping clove spice builds and carries, giving the whiskey a defined backbone. As it fades, it opens into juicy peach, ripe red apple, and a light dusting of cocoa powder. The transition is long and deliberate. This finish doesn’t trail off, it resolves.


Presentation
This is one of my favorite bottle designs on the market. And like the whiskey inside, it’s built on balance.
The label carries an intricate, information-rich design, but never feels crowded. It’s offset by a minimalist logo and deliberate use of negative space, allowing the glass shape and the natural color of the whiskey to do more of the talking. The bottle itself has a distinct silhouette that stands out without trying too hard.
The topper isn’t overly heavy, but there’s a noticeable, quality heft to the wood, and it delivers one of the more satisfying cork pops out there: clean, firm, and consistent.
While I’ll acknowledge some bias, the custom combination sticker Pierre designed adds a genuinely unique layer. It doesn’t feel like an afterthought. It integrates naturally into the presentation and gives this particular barrel a clear identity within an already well-designed package.


Distinctiveness
The defining trait here is contrast. Sweetness is expected in this style but structure isn’t always guaranteed. This barrel delivers both.
Where many toasted wheated bourbons lean soft or one-dimensional, this one maintains tension from start to finish. The sweetness draws you in, but the spice and oak keep it grounded. That balance is what ultimately separated it from the rest of the lineup.

Transparency
This is a personally selected barrel, and that comes with inherent bias.
That said, the selection process was deliberate and comparative. We passed on multiple strong options before landing here.
More importantly, the reasoning is clear and repeatable: this barrel had the most complete finish of the group. That wasn’t a subtle distinction. It was the deciding factor.

Value
At 129.6 proof and 7 years, this sits in a space where expectations are higher — and rightfully so.
What justifies it here is not just intensity, but cohesion. The proof delivers weight, the age brings structure, and the custom toasted barrel finish ties it together.
For those who appreciate cask strength bourbon with a defined arc, this feels appropriately positioned.

As a rule, I don’t assign scores to barrels I’ve personally selected. There’s an inherent bias in the process, one I’m comfortable acknowledging, but not interested in masking with a number.
What I can say clearly: this barrel distinguished itself in a lineup of strong samples by delivering the most complete and decisive finish. That was the separating factor, and it wasn’t particularly close.
It carries a profile that leans rich and dessert-forward, but never loses structure. The balance between sweetness and spice is what gives it staying power and ultimately what made it an easy choice at the table.
After a growing list of selections, this remains one of my top three picks to date. Not because it tries to overreach, but because it executes its profile with clarity and confidence.
